FOCUS AND SCOPE :

Journal of Toque and Apron (JT&A), specifically focuses on skills related to the culinary world, with coverage of - but not limited to; The profession of chef and commercial kitchen crew, Characteristics of non-processed and processed foods and food ingredients, Application of culinary arts knowledge and skills in food processing and dish presentation, Commercial kitchen management, marketing of food products, restaurants by chefs, Socio-cultural perspectives on various food products, and; Culinary tourism, both studied based on various scientific perspectives.

This journal utilizes the LOCKSS system to create a distributed archiving system among participating libraries and permits those libraries to create permanent archives of the journal for purposes of preservation and restoration
