THE COMPETENCE OF WAITERS IN RECORDING FOOD AND BEVERAGE ORDERS AT BLACK CANYON COFFEE SHOP IN MAKASSAR
Abstract
This study aims to understand how waiters' knowledge, skills, and attitudes improve service. This research uses qualitative methods with four data collection techniques: observation, interviews, literature study, and informants. The informants in this study consisted of three roles: General Manager, Waiters, and Guests. The results show that the waiters at Black Canyon Makassar are not yet optimal. The waiters lack knowledge, skills, and attitudes about recording food and beverages, resulting in suboptimal service. Waiters need to be knowledgeable about "recording food and beverages" to provide good service to guests.
