Abstract

This research focuses on the problem of beverage management at Arthama Hotel Makassar, specifically in the implementation of effective purchasing strategies to meet customer needs with high quality standards. This research aims to explore the procurement and supplier selection process, and assess its impact on the availability and quality of beverages served. The methodology used includes in-depth interviews with hotel management and staff, direct observation of operations, and secondary data analysis of financial reports and related documents. Key findings show that careful supplier selection and effective inventory management contribute significantly to customer satisfaction and operational efficiency. The conclusions of this study emphasize the importance of flexibility and adaptability in procurement strategies to deal with market dynamics. Further recommendations include the need for additional research involving more hotels and quantitative approaches to broaden the understanding of effective procurement strategies in the hospitality industry.
